Is there some yeast or bacterium that will eat gluten? I was hoping for some kind of yeast, but I can't find one. Where could I find one?

Can you motivate your question a bit, if possible? Are you looking for proteases that specifically target gluten only? Or organisms that are attracted to gluten? –  Memming Sep 14 '13 at 13:39
