Since sucrase is the enzyme that breaks down sucrose into glucose and fructose. Will sucrase also catalyze the breakdown of disaccharide maltose?

  • Welcome to SE Biology. I cannot answer your question, partly because I don't know much about this topic, but also because you need to supply more information in your quesiton. 1. What species are you referring to? Plants, animals, specifically humans? 2. Which enzyme are you referring to? Wikipedia lists three, each with a different EC number. I imagine the substrate specificity will differ between these, so you need to be specific — even if the enzyme isn't ;-) – David Oct 11 at 22:33
